Day 3 – Eat Something Green Twice A Day
Today and everyday of the #30DaySuccessChallenge eat something green twice a day…and no, green M&Ms do not count. To color psychologists, green is the color of harmony, balance, and growth, and to me it’s body candy! It nourishes everything from your top to your bottom!
Unfortunately in this country the majority of us don’t eat enough green vegetables. The National Nutrition Guidelines indicate that we should be eating 2-3 cups of these beautiful green creatures every single day. In reality we are only consuming about 1.5 cups, and a big chunk of that is usually consumed as tomatoes and potatoes.
Green veggies provide you with your daily supply of potassium , vitamin A , vitamin C , Vitamin K , folic acid, and fiber; and my favorite part is that they are so low in calories, you can eat until you are full without having any guilt!
Benefit From Eating Vegetables:
1) Live Longer! A study out of Sweden found that people who ate at least three servings of vegetables each day lived 32 months longer than people who didn’t eat many.
2) Want to be happy? Eat lots of veggies! Researchers found that people who ate at least 7 servings of fruit and vegetables a day were happier and had better mental health. Twice a day for 30 days is a start. You have to begin somewhere!
3) Lower the inflammation in your body. A study looked at 1000 women and found that the one’s who eat the largest number of cruciferous vegetables (cabbage, broccoli, bok choy, Brussels sprouts, kale and cauliflower), had a lot less inflammation in their body.
The challenge is to EAT the veggies instead of drinking them. Studies show that when we chew our food, we feel like we’ve eaten. However, when you just swallow your calories, your body doesn’t think of it like a meal. An hour or so later your body is craving calories again. Smoothie drinkers sometime have a hard time losing weight because of this little caveat. They end up taking in more calories than they thought they would because they missed out on breakfast chewing.
If you Increase your intake of daily green vegetables it will naturally lower your cholesterol, decrease your risk of heart disease, and keep your bowels moving! They are also packed with antioxidants to help fight off aging and cancer. Frozen or fresh is perfect, just try to avoid canned ones because they are packed with sodium and preservatives.
Start experimenting with different veggies. If you see one you haven’t tried, ask someone in the produce department what it is, Google it, and find a recipe for it. The best part about cooking veggies is that once you try it, you will notice how incredibly easy it is to make them taste soooo good. Some olive or coconut oil in a pan, add a pinch of sea-salt, garlic, smoked paprika, and cumin, and most people will think your vegetables are restaurant worthy!
Green Veggie Tips:
1) Don’t cook them until they’re mushy. Most of the good stuff has been cooked right out!
2) Get the kids invested in veggies early. In the springtime you all can plant an urban or country garden full of their favorites
3) Don’t be afraid to try new ones
4) If you like the charred taste on your veggies, steam them 1st and the put them on the grill. Too much heat can damage your veggies.
5) Don’t eat the same one every day. Rotate vegetables so you are getting a variety of nutrients
6) Eat as many as you like, they tend to be very low in calories!
